A Chinese chef's knife. Commonly referred to as a Chinese cleaver, this knife is actually used more similarly to a chef's knife. This knife is used for prepare boneless meat and to chop, dice or mince vegetables and scoop them to the cooking area. The blade is about the same thickness as a regular chef's knife, so it is not designed to cut through bone.
